Since soups are mostly liquid, they’re a great way to stay hydrated and full. They give you an immune system boost. Soup can help you stave off cold and flu, and they’re a great antidote for times when you are sick, too! They, are inexpensive and easy to prepare soups and stews and don’t require a large amount of hands–on time.

1)HOW TO MAKE VEGETABLE SOUP

making it perfect for a fuss-free, flavourful meal. We start by sweating onions, carrots, and celery in olive oil with a touch of tomato paste. I add more flavor with garlic, fennel seeds, salt, and pepper. Pour in your choice of vegetable. Then, add diced tomatoes, potatoes, cabbage, and bay leaves. Let the soup simmer until the vegetables are tender, about 20 minutes. Then, when I have them in the freezer, I toss in frozen peas and cook them for a few more minutes to heat through. Before serving, make sure you taste your soup and adjust with more salt and pepper, and for a pop of flavor, add a dash of apple cider vinegar or fresh lemon juice.

Bonus Tip: Customize this vegetable soup with your favourite seasonal vegetables! In the summer, add fresh zucchini or corn. In the winter, try hearty root vegetables like parsnips or turnips. The possibilities are endless!

2) Broccoli Cheese Soup Recipe

  • Broccoli, of course! Cut it into small, bite-sized pieces so that you get some in every spoonful of soup.
  • Onion and garlic – They add a Savory depth of flavor.
  • Butter and flour – They create a roux that thickens the soup.
  • Milk – It perfects the soup’s creamy texture. Whole milk is traditional in broccoli cheese soup, and it works great here, but I often use unsweetened almond milk instead, and it works nicely too. The soup is a tad less thick, but it’s still delicious!
  • Vegetable broth – Use store-bought, or make your own.
  • Carrot – You can finely chop it or julienne it. I personally like to julienne it because the shredded carrots remind me of grated cheese, and I think they give the soup a fun, extra-cheesy look.
  • Dijon mustard – It adds a tangy, peppery depth of flavor.
  • Cheddar cheese – It wouldn’t be broccoli cheddar soup without it! Sharp cheddar cheese is my fave, but feel free to opt for a mild cheddar if you prefer.
  • And salt and pepper – To make all the flavors pop!

3) CAROOT GINGER SOUP

This 7-ingredient carrot ginger soup is one of our favourite recipes for brightening up cold days. Creamy & refreshing, it’s a satisfying, cozy meal RECIPE-

  • Onion and garlic give it a depth of flavor.
  • Ginger adds a lovely freshness and plays well with the carrots’ sweetness.
  • Extra-virgin olive oil adds richness.
  • Apple cider vinegar makes it bright & tangy.
  • And veggie broth gets the blender moving and ties it all together.
  • Season to taste with salt and pepper, and add a bit of maple to sweeten it up, if you wish. That’s it!

4) Sweet Corn Soup

  • Let the ginger garlic fry for 30 seconds.
  • Add 1/3 cup fine chopped carrots and ¼ cup fine chopped French beans. …
  • Add sweet corn and sweet corn paste made from half cup sweet corn kernels blended with ¼ cup water.
  • Pour 3½ cups water and mix well.
